AUSTIN (Austin Business Journal) — Breakfast and brunch eatery Eggs Up Grill is bullish on entering the Austin market through its franchise model.
The South Carolina-based chain, which operates legally as EUG Holdco LLC, has generated interest from local entrepreneurs after making its Texas debut in the Dallas area. Company officials said the Austin metro could have as many as eight locations in the next five years, with more restaurants possible after that.
Two multi-unit franchisees have already signed on: husband-and-wife team Michael and Rana Boselah, and partners Megan Hood and Omar Thompson. The Boselahs are focused on expanding on the northern side of the metro, while Hood and Thompson are targeting the south side. Each pair has committed to four locations, and Eggs Up Grill CEO Ricky Richardson said the company has room for an additional franchisee group in the metro.
